Here is another very simple salad that turns out to be unexpectedly delicious. We make this salad almost every week.
- one bunch of kale
- toasted sunflower seeds
- dried currants and/or cranberries
- pecorino romano cheese
- chopped cashews
- green apple or d’anjou pear (optional)
After washing the kale, massage it until it is bright green and tear into small pieces. Sprinkle with seeds, nuts, and currants. If you add apple or pear, chop into small cubes and add to the salad. Toss with a lemon vinaigrette dressing and shred a little cheese over the top.
