Zucchini Bread

This zucchini bread is more like zucchini cake. Quick and delicious, but don’t eat too much at once!


  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp vanilla extract
  • 2 cups zucchini, grated
  • 3 cups flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • Raisins, nuts, or dates (optional)


Preheat oven to 350. Beat together eggs, oil, sugar, and vanilla. Add grated zucchini and stir in.

In a separate bowl, sift together flour, cinnamon, baking soda, baking powder, and salt. Add to the liquid ingredients and mix together.

If using raisins, nuts, or dates, add to the batter and mix.

Grease and flour two loaf pans. Split the batter evenly between the two pans, then bake for 1 hour. Let cool in the pan for a minute or two, then carefully detach from the sides and turn over onto a cooling rack. Cool loaves for at least 10 minutes before eating.
