Spicy Bagel Sandwiches

Almost too simple to write down, but the combination turned out to be unexpectedly worth saving.

INGREDIENTS

  • 1 plain bagel
  • 1 or 2 slices of cheese. Sharp cheddar or havarti work well
  • 3 or 4 deli slices. Tofurkey hickory smoked or ham slices work well
  • Optional: 1 or 2 slices of red onion
  • Sriracha sauce

INSTRUCTIONS

Slice the bagel in half and lightly toast. You want it to be warm and just starting to develop some crispy spots, but not all the way toasted. You can also substitute other kinds of plain-ish bagels like garlic; the main thing is that you want it to have fairly uniform internal texture and no excessive toppings.

Add Sriracha to both sides of the bagel and let it soak in a bit. Depending on your heat preference, anywhere from a few drops on each side to a full ring of sauce might be suitable. It generally soaks in (this is why you don’t want the bagel too toasted), so you’re going to get spicier bites without getting full-on hot sauce on your tongue.

Lay the cheese, deli slices, and onions on one side, then close it up and eat. This sandwich is also good later after it cools to room temperature.
